While Albet i Noya was established in 1978, its roots in organic craftsmanship date back to the turn of the 20th century. Even though the phylloxera epidemic was at its height when their great-great-grandfather Joan Albet i Rovirosa arrived to work the vineyards, he stayed there. One of the few wineries that labels their bottles "Classic Penedès" rather than "Cava," a distinction that indicates the wine was made entirely from grapes cultivated, harvested, and vinified on the estate and matured for at least 15 months before distribution.

Created from a blend of Chardonnay, Macabeo, Xarel-lo, and Paralleda, this certified organic Cava shows citrus and honeydew notes, with a dry finish full of mineral and sage. Andy adds:  "Citrus, apple, a hint of petrol (a la Riesling). Overall slight savory and gorgeous."
