"This Italian Salsa Verde leans into briny, lemony, herbal intensity, so I want a white with enough texture and fruit to stand up to those bold flavors while bringing a little salinity of its own. This wine is primarily made from Caprettone, a native Campanian grape that I've never heard of, with a bit of Falanghina blended in. Owner and Winemaker Andrea Matrone worked at Cakebread Cellars before returning home to farm his family's 5 hectares of ancient, un-grafted pre-phylloxera vines just outside Naples -about a kilometer from, the sea. The wine spends 3 days on the skins, giving it a slightly golden hue and a subtle textural grip. Expect dried apricot, red apple, citrus, sea salt, and a lightly stem-my, herbal edge that should pair beautifully with this herbal infused Italian Salsa Verde."
