Again, although old world, would you call the French Baguette stodgy? The French baguette as we know it today was largely perfected in early 20th-century Paris. While it's exact origin is debated, most agree the bread evolved through the 1830s introduction of steam ovens and the labor laws of the 1920s forcing bakers to step it up!
