Andy Says: "OK, this bottle in not aged in ancient amphorae but COS does use amphorae in some of its more experimental wines. Rami is made from roughly equal part of the indigenous Sicilian grapes Inzolia and Grecanico with about 10 days of skin contact making it a moderately extracted orange wine. Farmed organically and bio-dynamically with wild yeasts and minimal intervention, the wine presents lovely Mediterranean flavors of dried apricot, tangerine peel, white flowers and salted almonds. As I have written before, orange wines are not for everyone, but it you have been curious, this is a great place to start. It's distinctive without being aggressively funky or challenging. Try it with mushroom risotto!"
