Andy Says: "Ok. Forget everything you know about Zinfandel. This wine is produced using the same carbonic maceration technique made famous with Beaujolais Nouveau. This Zinfandel is light, delicate, chill-able and surprisingly refreshing while still retaining Zinfandel's classic juicy fruit. Since arriving, KC Labs has quietly become a "chill-able red" customer favorite. Sourced entirely from the certified organic Venturi Vineyard in Mendocino, this low intervention wine shows flavors of cranberry, raspberry, candied strawberry with low tannins and acidity bright enough to remind me of a Rosé. Serve cold on a hot day with joy and don't take the wine too seriously"

  Winery Says" KC Labs (or Kivelstadt Labs) is owned by Jordan Kivelstadt, who founded it as the experimental side project of his main winery, Kivelstadt Cellars.   KC is "all about bucking the traditions of California wine," the winery explains, "and there's no better example than our Zinfandel. The fruit is grown at Venturi Vineyard in Mendocino and is harvested early then allowed to ferment carbonically without being crushed. This process allows us to take what is normally a jammy, tannic, and high-alcohol varietal and turn it into a light, fresh summertime wine. Served chilled, this wine will challenge your perceptions of what Zin can be and what it should be."

 

  *Carbonic Maceration: Wine Spectator Says: Carbonic Maceration is an anaerobic winemaking process where whole, uncrushed grape clusters are sealed in a carbon dioxide-rich tank. Instead of yeast converting sugars, natural enzymes inside the intact grapes ferment the fruit inside out, resulting in aromatic, fruit-forward wines with soft tannins. Expect prominent aromatic notes of banana, Kirsch, and candied red fruit. And, because the juice has minimal skin contact before the berries split, the resulting wine is smooth and lacks the harsh tannins typically associated with heavily extracted reds.
