"If we're making Mexican Salsa Verde, why not pair it with Mexican Wine? I'll admit I am not always a fan of Chenin Blanc from warmer climates, so this one caught me off guard in the best way. The fruit comes from a cooler, coastal site, keeps the acidity fresh and lively. Expect tart pear, orange zest, a hint of white peach, and a touch of creaminess from less aging. It's a great wine on its own, but really shines with bright, tangy dishes- especially anything topped with Mexican Salsa Verde!"
