   "When I was 19 I studied abroad in Germany and as a snack bought a wedge of 10 year old Gouda to take with me on the train. Holy smokes! It was life changing. I can still remember the crunch of the crystalized bits and the intense pop of umami flavor. You could definitely pair your preferred lighter bodied white with Gouda OR you could go out of the box and pair a lighter bodied red. An Austrian Zweigelt would make a perfect partner. This varietal is comparable to Pinot Noir or Gamay. In fact, an Austrian importer summed up Zweigelt as "Beaujolais, covered in black pepper. Expect flavors of bing cherry, cranberry, violets and, yes, the characteristic black pepper."
