This version sees an extended time on the lees, the yeasty particulates that drop out during fermentation, which gives Willy a creamier, weightier expression
than our other popular Jacquere. Picked by hand from a single parcel,
it shows flavors of citrus, almond, cream, white rocks and a little bit of Alpine Flowers. The classic pairing is with Raclette or Fondue,
but Willy works anywhere a crisp, Dry White is needed."
